Fructose (high fructose syrup)

High fructose syrup, or more commonly known as fructose, is made by converting starch using enzymes. It a liquid syrup that mainly constitutes monosaccharides, such as fructose and glucose. The US Food and Drug Administration (FDA) considers high fructose syrup to be a substance under the Generally Recognized as Safe (GRAS) category, that is, it is safe for ingestion without any side effects. There are primarily three types of high fructose syrup on the market, divided based on its content level: HFS 55 (55% fructose), HFS 42 (42% fructose) and HFS 90 (90% fructose). Of which, HFS 55 is the most common high fructose syrup. It is also the most common additive in many beverages, which does not differ much from cane sugar.
